Cleaning vs. Sanitising: What's the Difference?

Cleaning and sanitising solve different problems — one removes visible soil, the other reduces microbial load. Here's why commercial kitchens need both, in the right order.

The short answer

Cleaning removes visible dirt, food residue and grease from a surface using detergent and physical action. Sanitising is a separate step that follows cleaning, and it reduces the number of microorganisms on that already-clean surface to a level considered safe for its use.

The two are not interchangeable. A surface can look completely clean and still carry a microbial load that cleaning alone does not address.

Why the order matters

Sanitisers are formulated to work on a surface that is already free of visible soil — grease and food residue can shield microorganisms from a sanitiser and reduce its effectiveness. That's why a professional kitchen hygiene program treats cleaning and sanitising as two distinct steps, not one combined wipe-down.

This is also why warewashing programs typically separate a detergent wash from a rinse or sanitising stage, rather than relying on a single all-in-one product for high-risk, food-contact surfaces.

Where this shows up in a commercial kitchen

Food-contact surfaces — chopping boards, prep counters, utensils — are the areas where the cleaning-then-sanitising sequence matters most, because residual microorganisms there have a direct path into food.

Floors, walls and equipment exteriors are usually cleaned on a regular schedule but don't always require the same sanitising step, since the risk profile is different.

A practical takeaway

If your kitchen hygiene program only involves one product and one step, it's worth checking whether that step is actually removing soil and reducing microbial load, or only doing one of the two. A structured hygiene program should be explicit about which surfaces need both steps and in what order.
